The history of Sault

Jodi & Damien had been admiring Sault for many years throughout their frequent stays in Daylesford. Being regular visitors to the area for more than 8 years, they watched Sault grow from its days of inception to the spectacular venue it is today. As such, in February 2006, they held their wedding reception there.

Like many couples before them, they quickly established a great relationship with Elle & Troy, which lead to a conversation in regard to a possible sale of the Sault business. Having moved to Daylesford from Melbourne a few months earlier and with ten years hospitality and event management experience between them, Jodi & Damien were excited with the prospect of a new venture.

Sault is one of Daylesford's most sought after wedding venues, set amongst picturesque Lavender fields, beautifully manicured acres of garden, and a stunning feature lake. With a fast growing reputation as a Restaurant & Function venue, to guests from all corners of the globe. This reputation is enhanced by the culinary delights created by Head Chef Peter Rollinson, whose menus utilize locally grown produce, our very own herbs, vegetables, trout & seasonal yabbies. Having spent two years at Melbourne 's Circa Restaurant, Peter has developed a wonderful gift & love for food, which is evident in every dish that he creates.

Damien along with Andrew Percy (previously managed Tolarno Restarnt in St Kilda from 1995-2006) worked closely to create a new wine list focusing on local and national wines.

With such a zest and determination to create a wonderful dining experience to be had by all at Sault Jodi and Damien with the assistance of a fabulously talented Kitchen staff Peter Rollinson (head chef), Phil Duggen and Kylie Himmerman aim to please all who dine at Sault.

With an excellent team of experienced staff, Sault is able to cater for weddings and group bookings of all sizes.
