Sault is now open Thursday nights for dinner.
We welcome our new head chef Cindy Crozier.
Cindy hails originally from Kyneton and has garnered her skills from such wonderful establishments as Midsummer House in the Uk and Aria in Sydney.
She has designed a new Winter menu to warm your palettes.
With Winter on our doorstep it is a great time to come in and sit by the roaring fire and enjoy a glass of wine or enjoy a meal overlooking the lake as the winter sun sparkels and the leaves change to gold.
For a tasty example of the new menu why not try the Pan roasted scallops on cauliflower puree with Istra chorizo and petit herb salad followed by the crispy skinned free range duck breast, on herbed lentils wiht sweet potato puree, wilted spinach and Tokay sauce and to complete the night, the Kennedy & Wilson chocolate and mocha tart, cardamon ice cream and vanilla tuille

The history of Sault
Jodi & Damien had been admiring Sault for many years throughout their frequent stays in Daylesford. Being regular visitors to the area for more
than 8 years, they watched Sault grow from its days of inception to the spectacular venue it is today. As such, in February 2006, they held their
wedding reception there.
Like many couples before them, they quickly established a great relationship with Elle & Troy, which lead to a conversation in regard to a
possible sale of the Sault business. Having moved to Daylesford from Melbourne a few months earlier and with ten years hospitality and event management
experience between them, Jodi & Damien were excited with the prospect of a new venture.
Sault is one of Daylesford's most sought after wedding venues, set amongst picturesque Lavender fields, beautifully manicured acres of garden, and
a stunning feature lake. With a fast growing reputation as a Restaurant & Function venue, to guests from all corners of the globe.
Damien along with Andrew Percy (previously managed Tolarno Restaurant in St Kilda from 1995-2006) worked closely to create a new wine list focusing on
local and national wines.
With such a zest and determination to create a wonderful dining experience at Sault, Jodi & Damien with help from their wonderful
kitchen and 'wait' teams (see team sault) aim to please all who dine at Sault.
With an excellent team of experienced staff, Sault is able to cater for weddings and group bookings of all sizes.
